Interesting sight. As a reenactor, this kind of information is handyto make the camp life accurate. A couple of questions come to mind. Whichwas more common in early America, white rice or brown "wild" rice ? Also,when did white sugar become available in early America ? I've read thatonly the wealthy could afford to buy sugar. Archaelogical evidence indicatesthat the skeletal remains of the rich can be determined by the teeth. Ifthe teeth are decayed, then chances are, the person could afford to eatsweets and sugar. Any theories ?

' A r t i c l e ' Genesis Of The Mighty Munch! One of the thingsI'm a connoisseur of is potato chips. Whether it has anything to do withme coming from their land of origin I don't know. However, what I do knowfor certain is I savor em and once I start eatin' em, I can't stop eatingem! And when a new style of chips shows up on the market, I just gottatry em! Years ago in those lean years when money was short, ah yes, wehave all been there done that, I would buy a bag 'o' potatoes and makemy own! Oh yeppers! A bag 'o' potatoes can make a massive amount of potatochips! Nowadays, when I want real potato chips and I have the time I stillmake em! I make em the same way the man who invented em did, back in thethirties in Chicago. He would spend his saturday mornings and afternoons,peeling and slicing potatoes into thin chips. Then he'd deep fry, drain,salt and then place em in a paper bag and sell em on a street corner inthe evening for a few cents. Overnight, the business thrived, was doinggreat until World War II broke out. Then his business slacked off considerably.You see, his name was Jap. His astute solution to this dilema was to chopoff the top of the 'p' which changed it to the letter 'y' and voila! JapsPotato Chips became Jays Potato Chips!
