HORSERADISH  Armoracia rusticana

Placed by differing sources as originating in numerous northern locales, horseradish's earliest write-up as a domesticated root comes from Germany, so we are going with that region as its birthplace. It was prized early on as a medicine, and is considered to be one of the five bitter herbs associated with the Jewish Passover meal. Grated and or pulverized, horseradish often accompanies roast beef in England, boiled fish in Norway.
