Lark pate or Pate d'Alouette, a French specialty of the region just northeast of Orleans. Larks were trapped in nets (shown below) as they swooped in to the ground attracted by
a twirling device decorated with tiny colored mirrors. This decoy was set on the ground and a hunter some distance away pulled on the string to set the device spinning as the birds approched.
Nets were suspended over the spinning mirror decoy and the birds got caught as they flew in to investigate. Lark hunting is now forbidden. Lark hunters and this traditional French delicacy became a thing of the past. ![]() We came upon the tray (shown in the top photo) depicting pate d'alouette, in the Saffron Museum located in the town of Boynes (Essonne). Besides the lark pate, the Gatinais was a center for the cultivation and processing of this valuable spice.
