Welcome to the exhibit on vegetables that mostly fall in the green column. Here you can explore many nutritional powerhouse plants, including broccoli, cauliflower and Brussels sprouts, all members of the cabbage family, all vegetable flowers. Artichokes are immature flower heads. Spinach, cabbage, lettuce and Belgian endive grow on a single stalk and have abundant leaves. Some of these grow heads, while others stay leafy.
Many, but not all, are annuals.
