Welcome to the exhibit featuring plants we typically grow for their underground roots or tuberous swellings. Roots bring water and minerals from soils to the plant growing overhead. People, and sometimes animals, eat a variety of roots, including carrots, turnips, radishes, cassava, beets and so on. Other plants store their extra fuel in tubers, growths that form at the base of roots. Among these are potatoes, sweet potatoes, Jerusalem artichokes, taro, oca and true yams. Many roots and tubers grow wild and are not yet harvested on a large scale.
