Red Pizza

Pizzas didn't overcome pasta in popularity until some unknown vendor came up with the brilliant idea to create a topping that tasted like the savouy tomato and cheese sauces of the rival spaghetti cooks.  The sauce was spread thinly and instead of the sharp, hard cheeses grated on pasta, chunks of softer, finely tasting mozzarella cheese were added.  These "red" pizzas became an instant and widely copied hit.
