Shrimp were once consumed only in areas near where they were caught. They were shipped elsewhere and served for special occasions. Now they are an international trade item and farmed in huge operations in such places as Ecuador, Thailand and Hong Kong. Shrimp are now America's favorite shellfish. They come in two basic types, warm and cold water shrimp. The colder the waters, the smaller the shrimp. (Hughes Food History Archives)
