Persians and people of the Arabian Peninsula have been cultivating sugarcane, a type of grass, for centuries. Sugar was once a rare luxury and came in big chunks that had to be pounded into crystals with a mortar and pestle. The sugar trade was built by slaves, brought to the Caribbean by African traders.
